Lemon Bars

This spring time weather is the perfect reason to do some baking. My aunt and uncle, who were here for the Easter holiday, gave us a few Meyer Lemons from one of their trees. Bright and sweet, these lemons will be perfect for our lemon bars. This recipe has been past down a few generations and is so simple, anyone can do it.

Recipe
 Crust:
1 cup softened butter
1/2 cup powdered sugar (plus more for sprinkling)
2 cups flour
pinch of salt


 Lemon Custard:
2 cups sugar
1/4 cup flour
4 eggs, beaten
2 lemons, zest and juice (about 6 tbsp) 


Preheat oven at 350 degrees. For the crust, mix dry ingredients with butter and form in the bottom of a 9 x 13 pan. Or two smaller pans. Bake for 15 minutes. Take out to cool slightly. Meanwhile make the filling.
In a bowl combine wet and dry ingredients. Mix well and pour over baked crust. Place back in the oven and bake for 25 minutes. Let cool completely and sprinkle powdered sugar over the top. Cut into bars and enjoy!
