Danny loves chicken tortilla soup, especially one from a popular restaurant we like going to. So instead of going out all the time to enjoy it we made our own version at home.
Recipe:
2 tbsp olive oil
1 yellow onion, diced
2 jalapenos, seeds removed and diced
10 to 15 cherry tomatoes, whole
3 to 4 cloves garlic, chopped
2 tsp cumin
1 tsp garlic powder
1 tbsp chili flakes
2 tsp ground black pepper
2 tsp salt
4 tbsp butter
3/4 cup flour
1/2 cup half & half
7 cups organic chicken broth
1 rotisserie chicken, shredded
1 handful cilantro, roughly chopped
Toppings:
Avocado
Lime
Cilantro
Tortilla Chips
Pepper Jack Cheese
In a dutch oven over medium heat drizzle olive oil and saute onion, jalapenos and tomatoes. Add spices and salt & pepper while the onions become translucent and peppers & tomatoes become soft. Add garlic and immediately add butter to melt, then add flour to make a roux. Stir and let the flour soak up the oil, then slowly stir in the half & half. Add the chicken broth, shredded chicken and cilantro. Stir and cover until the soup reaches a boil. Once boiling, reduce heat to a simmer. Stirring occasionally, cover for an hour for flavors to develop.
Once your ready to eat pour into a bowl and garnish with your toppings. Enjoy!
