Homemade Granola

 So I love the idea of homemade granola. Whenever I buy it in the store I usually put it in my favorite yogurt with fresh fruit. Like this morning I had strawberry yogurt with sliced Golden Delicious apples. But I was missing the granola. So I'm experimenting with my own version.

Recipe:
2 cups rolled oats
1/2 sliced almonds
1/4 canola oil
3/4 cup maple syrup
1/4 cup brown sugar
1 tsp vanilla extract
1 tsp of salt
1/2 cup dried cherries, cut in half
1 cup dried cranberries

Preheat Oven to 225 degrees.
In a medium bowl combine rolled oats and almonds. Meanwhile in a medium saucepan over medium low heat combine oil, maple syrup and sugar. Bring to light simmer and turn off heat. Then add vanilla extract and pour the oil mixture into the dry mixture. With a wooden spoon mix together until the wet has completely covered the oats. Then pour the granola mix onto a baking sheet in an even layer. Place baking sheet into the oven and bake for 1 hour plus an additional 20 to 25 minutes. The sweet smell will fill your kitchen and every once in a while open the oven and mix with your wooden spoon. Once you granola is a golden brown, sprinkle with salt and take out of the oven. With a spatula start putting granola in a medium bowl with dried cranberries and dried cherries. Let cool completely. Then store in an air tight container.


WARNING! THE GRANOLA WILL STICK TO THE PAN, UNLESS YOU DO 1 OF THE FOLLOWING:
  • LINE THE BAKING SHEET WITH PARCHMENT PAPER
  • SPRAY NONE STICK SPRAY ALL OVER THE BAKING SHEET
  • SPREAD MELTED BUTTER ALL OVER BAKING SHEET, ALONG WITH PARCHMENT PAPER.
