Chocolate Scones with Dark Chocolate Chips


 


My Chocolate Scones!
This was my test run and I love it. The only thing I would add is more extra dark chocolate chips.


Here is my recipe!

5 cups flour
1/2 cup sugar
1 tsp salt
2 tbsp baking powder
4 tbsp coco powder
3/4 lb unsalted butter (cold and cut into cubes)
1 cup unsweetened coconut milk (organic preferred)
1 cup milk chocolate chips (melted)
1 cup dark chocolate chips (melted) 
+ 1 cup additional chips for batter 
4 eggs
1/4 tsp vanilla extract

Make the scones: Preheat the oven to 400 degrees. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder, salt, granulated sugar and coco powder in a bowl. Beat in the butter with a mixer on low speed, then raise the speed to high and beat until the mixture is in coarse crumbles.
Meanwhile, melt chocolate: in the microwave or over a double boiler. Whisk the coconut milk, melted chocolate, eggs and vanilla extract in another bowl, then stir into the flour mixture until just combined. Stir in the chocolate chips; do not overmix.
Scoop 2-to-3-inch mounds of dough onto the prepared baking sheets (a large ice cream scoop works well for this). Sprinkle the tops with sugar and bake until golden brown, 15 to 17 minutes.

Best the next day warm or room temperature. Either with butter or all by itself! Enjoy!
