Blue Cheese Steak Sandwiches

Hearty, earthy and deliciously perfect. Deciding what's for dinner couldn't be simpler. Here is how blue cheese steak sandwiches can go from the grill to our mouths in no time.

Recipe
Sirloin Steak or Flat Iron Steak (1 lb.)
2 Garlic Cloves
1 Red Bell Pepper
Fresh Spinach (1 bundle or bag)
Blue Cheese
Ciabatta Bread (1 loaf or 2 small baguettes)
Heat up the grill with high heat and place the bell pepper on. Blacken the outside, turning occasionally. Once blackened, place pepper in a bowl and cover with plastic wrap. Set aside. Meanwhile, season steak with salt and pepper. Mince garlic and put on one side of the steak. Place steak on the grill, garlic side up for 4 to 5 minutes, then turn for another 4 to 5 minutes. Steak should turn out to a nice rare to medium rare. Take off the grill and cover with foil to rest for 5 to 10 minutes. Then, cut steak into thin strips. Now, drizzle olive oil over the cut ciabatta bread and toast on the grill for about 2 minutes. By this time the pepper should have stemmed enough to peel the skin off. Peel blackened skin off, then take the top out with the seeds attached and cut into strips.
Assemble your sandwiches! Take ciabatta half and top with a few strips of steak and layer with blue cheese crumbles, roasted red bell peppers, spinach and top with the other half of ciabatta. Cut in half and enjoy!
 Served with a spinach and raw mushroom salad with poppy seed vinaigrette!
