Chicken Caesar Pitas

Simple, quick and darn delicious. Put a chicken caesar salad in a pita and you got a light dinner for 2! This is what Danny and I came up with last night.

Chicken Marinade:
4 Tablespoons Extra Virgin Olive Oil
2 Teaspoons Sea Salt
Freshly Ground Pepper
2 Teaspoons Dried Oregano
1 Teaspoon Dried Mint
2 Teaspoons Dried Basil
3 cloves freshly minced Garlic

Chicken Caesar Pitas:
Chicken Breasts, Boneless & Skinless
Romaine Lettuce, washed & chopped
Asiago Caesar Dressing
Parmesan cheese
Pita Bread, Cut in half

First marinade 2 boneless, skinless chicken breasts for no less than 15 minutes in a zip-lock baggie. Grill for 5 minutes on each side, then let rest for ten minutes under foil. Meanwhile wash romaine lettuce and chop or tear into eatable sizes. Toss romaine with caesar dressing and shredded Parmesan cheese.  Cut chicken into slices and begin stuffing your pitas. Enjoy.
