Crepes with Macerated Strawberries

Strawberries on top of just about anything is good. Waffles, yogurt, ice cream and this morning my strawberries were in thin, delicate crepes.

Macerated Strawberries:
1 pint whole strawberries, sliced
3 tablespoons sugar
1 tablespoon freshly grated nutmeg


Crepes:
2/3 cup crepe mix (Voila La Crepe ~ Sweet Cream Recipe)
2/3 water
2 eggs
 

I use Voila La Crepes from Williams-Sonoma. They are so delicious and easy to make. 

Just thoroughly mix wet and dry ingredients together until all lumps are gone. Put a small pat of butter on the steel crepe pan, melt it and pour a full ladle size of batter onto pan. As you pour the batter continuously move the pan so the batter is even distributed. Use the crepe paddle to lift the edges of the crepe until ready to flip. Use to paddle to gently roll crepe onto its other side until done. Immediately top of strawberries and whip cream if your heart desires. Enjoy!
