Parmesan Eggplant Sandwiches

Something so delicious couldn't be more simple to make. All it takes is some cutting/chopping action and you got a fulfilling mouthful of satisfying flavors that work so well together.

Recipe:

Eggplant
Tomato
Parmesan
Fresh Basil 
Garlic
Fresh Ciabatta Bread

Preheat grill on medium high heat. Cut eggplant into 1/2 inch slices, season with olive oil, salt and pepper. Cut tomato into 1/4 inch slices and season with olive oil, salt and pepper. Place eggplant and tomato on the grill, turning them once until tomato skin crackles and eggplant is golden brown. Before removing eggplant, place a heaping pile of fresh parmesan until it melts. Remove and begin sandwich assembly! Cut and then grill ciabatta bread. While still warm rub garlic clove on the ciabatta. Place eggplant, tomato, fresh basil and the top piece of ciabatta, making a sandwich. Eat and enjoy!
