Pulled Pork: Rub, Rest & Roast

Danny and I have always wanted to make our own pulled pork, but we never got around to it. Little did we know how easy it was. Just 3 steps and the meat is falling off the bone, succulent and flavorful.  
Rub, Rest, & Roast. 

The rub Danny and I came up with is smoky, fresh and savory. It was literally made on a whim and with what we had in the pantry.

Dry Rub:
3 Tbsp Ground Black Pepper
2 Tbsp Salt
1 Tbsp Ground Cumin
1 Tbsp Smashed Whole Coriander
1 Tbsp Garlic Powder
1/2 Tbsp Dried Basil
1/2 Tbsp Dried Oregano
1 Tsp Dried Parsley
1 Tsp Cayenne Pepper
1 Tsp Red Pepper Flakes
1/2 Tsp Brown Sugar (optional)


Pulled Pork:
2 lb. Pork Shoulder
Dry Rub
1 onion, peeled & cut into quarters

First, rub the pork shoulder with the rub. You may not use it all, but make sure it is thoroughly covered. Second, let the pork shoulder rest, either overnight or for at least an hour in the refrigerator. Then preheat the over to 300 degrees, place the pork shoulder in a dutch oven with the quartered onion and put on the center rack in the oven. Let the pork roast in the oven for 4 to 4 1/2 hours or until the meat is falling off the bone. Literally. Serve hot & immediately.

A few different ways to enjoy your delicious pulled pork is simple. Make a wrap with fresh romaine lettuce, a warm pork taco salad or a bbq pork sandwich on a sesame seed bun.



Romaine Pork Wrap 
 In a skillet heat pork with bbq sauce and wrap in fresh romaine lettuce. Add grilled red onions and mozzarella cheese if added yum factor.

Warm Pork Taco Salad
Fresh Romaine Lettuce, chopped
Warm Pulled Pork 
Fried Onions
Red Bell Pepper, diced
Roma Tomatoes, diced
Roasted Pepper Vinaigrette, or your favorite vinaigrette instead
 Toss all ingredients together and enjoy. Use as much of each ingredient as you would like, this is a no recipe recipe. Personally, I would use less fried onion and more veggies & pork. I would also grind black pepper and toss before devouring. A great addition to the salad would be cannellini beans (drained, rinsed & patted dry) for a creamy texture.  

 I even made one for Danny to take to work.
