Roasted Sweet Potatoes

Sweet Potatoes (Easy Side Dish #2)

I find this potato to be completely satisfying! The sweet potato is full of vitamin A & C, a great source of beta-carotene, fiber, potassium and iron. Good for you and easy for a week night meal. 
This is how I make my simple side of sweet potatoes!
Recipe:
1 sweet potato
2 tsp butter
2 tsp honey
marshmallows (optional)

Preheat the oven to 400 degrees. Place the sweet potato on a baking sheet, poke holes in it with a fork and roast for 45 minutes. Take out and pull off the potatoes skin. Smash the potato flesh with the butter and honey. Enjoy like this or add marshmallows for a lil sweetness.
