Tomatillo Avocado Salsa


Danny and I have had many green salsa's from the store. Whether from the popular grocery stores or a Mexican market, they are all generally good. So, spontaneously we wanted to try our own and it was surprisingly easy. Really good too! 


Recipe:
3 whole garlic cloves
1 quarter white onion
1 handful fresh cilantro
1 tsp course sea salt
4 roasted tomatillos
1 roasted jalapeƱo
Fresh lime juice, 1 to 2 limes
1 avocado 


First, heat your grill (outside or stove top) and place tomatillos and jalapenos on when it is hot! Meanwhile, peel the garlic, cut the onion and place in a food processor fitted with a steel blade. Add a handful of cilantro with the sea salt and pulse until the mixture is a fine mince. Once the tomatillos and jalapenos have blackened (with clear juices running out) take them off the grill and straight into the food processor. Pulse together and add the fresh lime juice and avocado. Pulse again until its a smooth consistency. Enjoy this salsa right away while still warm or place in the refrigerator for an hour for a chilled salsa.

Note: You can also double/triple this recipe for a larger batch. Also, you can use more avocado for a creamier salsa or more tomatillos and lime juice for a thinner salsa. Either way it's always going to be good and you can't mess it up!
