Sweet Potato Match Stix

While the fryer was out Danny and I decided to make sweet potato fries! Although I haven't always loved sweet potatoes, they have grown on me. It's something about the chewy texture that's unlike any other french fry, but with a slight sweetness that keeps me going back for handfuls. Baked is also delicious and healthier!


Recipe:
2 Sweet Potatoes, washed
salt
brown sugar


Set your deep fryer to 375 degrees. Wash your sweet potatoes, pat dry, peel and start cutting. First in half, then place the potato cut side down and cut in halves again. Cut the potatoes into thin slices that look like match sticks. To fry the match sticks, fry for about 5 to 6 minutes or until crispy, golden brown. Place on a paper towel and sprinkle salt and brown sugar on top. As much or as little as you please. Enjoy as a snack or as a sidedish.

To Bake:
Toss potatoes with olive oil and light salt! Bake for 30 to 35 minutes in a 375 degree oven.
