Cream of Tomato & Onion Soup

On a cold night with a grilled cheese sandwiches! It's my go-to, simple winter meal!

Recipe:
Olive oil
1 yellow onion, medium dice
1 garlic clove, roughly chopped
10 Roma tomatoes, medium dice
salt
Pepper
Herbs de Provence
Chile flakes (optional)
1 cup chicken broth
1/2 cup half & half


In a dutch oven over medium heat, saute onions with garlic and add in tomatoes with a few swirls of olive oil. Season with salt, pepper, Herbs de Provence and chile flakes. Stir occasionally while onions are translucent and tomatoes have broken down. Add in broth and then ladle into a blender. With a towel on top of the blender (for your safety) blend until smooth. Pour back into dutch oven and add half and half. Serve hot with grilled cheese sandwiches for dipping. Enjoy!
