Herb & Spice Brine



What is a brine!? Well I found a great video that explains it all! Plus tips for the best way to brine and store your turkey!


Recipe
1 gallon water, filtered
3/4 cup kosher salt
1/2 cup sugar, granulated
1/4 pepper corns, whole
1 tsp clove
star anise,  5 to 6
red onion, cut in half
rosemary, a few sprigs
thyme, a bundle
Sage, 3 leafs
orange or lemon peel

Bring a gallon of water to a boil over high heat! Add your favorite holiday seasonings and herbs! Let cool!

This can be done up to 4 days in advance! Just refrigerate! When your ready sit bird in brine for 12 to 24 hours! Rotate half way through! Then, rinse bird and pat dry before roasting!

After adding the turkey to the brine we added about 5 to 6 more cups of water. Then we zipped up the bag and set it back into the cooler! To maintain a cold (very cold) temperature we added a large bag of ice.  Turn turkey half way through brining process!
