Madre's Chicken & Dumplings

My husband Danny loves his mom's chicken and dumplings recipe. For him it's a comfort food that reminds him of home and family. It's warm, makes you want to get cozy on the couch with a blanket and watch movies, which is exactly what we did. The house smelled like I had been cooking all day long and it only took a little over an hour to make. Thanks Madre!
 Chicken Broth Recipe
1 whole rotisserie chicken, meat pulled off the bone
5 cups water
1 tbsp corriander seeds
1 tbsp chili flakes
1/2 tsp salt
1/2 tsp rosemary
1 tsp pepper

Chicken & Dumpling Recipe
2 cups broth
1 cup water
2 cups milk
shredded chicken
8 to 10 carrots, peeled & chopped
1 cup frozen peas
2 1/2 cups Bisquick mix
2/3 cup milk

 First, the broth. In a dutch oven over medium high heat, bring the water, seasonings and chicken bones to a boil. Lower the heat and let simmer for over an hour. The chicken will fall apart even more and the broth will be rich with flavor. Take out the bones and strain out herbs. This will leave you with a clean and beautifully seasoned broth. 
In the same dutch oven add water, milk and chicken to the hot broth. Bring to a simmer and add the carrots and peas. Now, make the dumplings. In a bowl combine flour mix with milk and form dumplings with a tablespoon. Drop each dumpling into the pot and cover for about 7 to 10 minutes. The dumplings will be cooked and your soup will be delicious!
