Bacon & Broccoli Quiche

A quick breakfast solution for when you don't feel like standing over the stove cooking bacon and eggs. Delicious for brunch too!



Recipe:
7 eggs
1/3 cup milk
1 scallion, thinly chopped
1 large broccoli head, cut into smaller florets and blanched
6 strips bacon, fully cooked and roughly chopped
1 pie crust, fresh or frozen
2 tbsp Parmesan cheese, shredded


First preheat oven to 400 degrees and take a frozen pie crust out of the freezer or roll out freshly made pie dough. Once pie crust is ready (rolled out and formed in pie dish), prick the bottom of the pie shell with a fork. Set aside and prepare the filling by cracking each egg, one at a time in a separate bowl and scramble together. Add milk, cooked broccoli florets, scallions and bacon pieces. Season with salt and pepper.  Place pie shell on a baking sheet and pour filling into pie shell. Top quiche with shredded Parmesan cheese and bake for 35 minutes. Crust with be perfectly browned, let cool slightly and then serve. Enjoy!
Bacon Recipe:

6 strips bacon

Line baking sheet with heavy foil and preheat oven to 400 degrees. Lay bacon flat on foil and bake bacon for ten minutes. If you want it more well done and crispy continue baking for 3 to 5 more minutes.
