FN Diner Brownies

During a weekend trip to California for our two good friends graduation celebrations my mother-in-law made Food Network's Chocolate Diner Brownies. They were surprisingly moist, decadent and chocolatey. It's a great base recipe for a pure chocolate cake-like brownie, but you can add nuts, dried fruits or even more chocolate. Try them out!
Cakey Brownie Recipe:
1 3/4 cups flour
3 tbsp cocoa powder
1 tsp salt
1 tsp baking powder
1 cup unsalted butter (2 sticks)
2 1/2 cups brown sugar
1 cup water
6 oz unsweetened chocolate, chopped
5 eggs
2 tsp vanilla extract

In a separate mixing bowl combine flour, cocoa powder, salt and baking powder. In saucepan over medium low heat melt butter, brown sugar and water. Once melted take off the heat and whisk in the chocolate. Then whisk in each egg, one at the time and add the vanilla.

Madre decided to double the frosting recipe. I agreed that it had just the right amount of frosting since the brownie was so rich!

Frosting Recipe:
1/2 cup unsalted butter
1 1/4 cup powdered sugar
3 tbsp cocoa powder
2 tbsp milk
1/2 tsp vanilla extract

Combine all ingredients in a bowl and beat together. Spread on top of cooled brownies, cut and enjoy!
