Sweet Cilantro Peach Salsa

Anytime fresh white peaches are in season I love to grab a big bag full. Eating them as they are is wonderful, but finding different ways to incorporate them into other dishes is even better. In desserts and over ice cream, but I decided to put them into a salsa and I was happily surprised with the turn out!
Recipe:
4 ripe white peaches, skinned and thinly diced
1 tomato, finely chopped
1 Serrano pepper, seeds out and finely diced
1/2 red bell pepper, finely diced
1/2 white onion, finely chopped
1 ripe avocado, flesh finely chopped
1 bunch cilantro, chopped
1/2 lime

Simply, chop and dice all your ingredients. Combine in a bowl and stir to mix. Squeeze the juice of the lime over the top and stir again. Serve with tortilla chips and keep cool.
Note: If your having a hard time skinning the peaches you can drop them in a pot of boiling water. Keep them in a minute. This is not to cook the peaches but so the skin separates from the flesh.
