Breakfast Quesadillas


Recipe (makes 4 half quesadillas)

6 eggs, beaten
1/4 cup milk
salt & pepper4 medium size flour tortillas
1 cup mozzarella cheese
4 strips bacon, cooked and chopped or
4 oz ground maple sausage, cooked
1 tomato, sliced or diced
1 cup baby arugula
1/2 cup cheddar cheese
2 avocado (optional)
salsa (optional)
 
In a bowl beat the eggs with the milk, salt and pepper. Pour into a buttered pan to scramble. 

Meanwhile, with your griddle heating on the stove top over medium heat place your tortilla. On one half of the tortilla add 1/4 of the the mozzarella, bacon and/or sausage and diced tomato. Top with 1/2 cup worth or a little less of your scramble eggs. Then add the cheddar cheese and arugula. Fold over the other half of your tortilla. Once one side is a golden brown, flip to brown the other side. Once it's done, enjoy with salsa and avocado! Enjoy!
