This recipe is simple. Danny uses Bisquick pancake mix for the perfect pancake. You can always use a from scratch pancake batter recipe, but Bisquick is great for a guaranteed fluffy flap jack.

Bisquick Pancake Mix
1 tbsp sugar
6 strips bacon
butter
maple syrup


First, brown your bacon in a saute pan over medium high heat. For every two servings of pancake batter we use 6 strips of bacon. While your griddle is heating over medium high heat make your pancake batter and add in the sugar. At this point you can use butter (about 1 tbsp) on your griddle or even some of the bacon grease (1 tbsp), or both. Using a 1/4 cup measuring cup to pour your batter onto your hot griddle. Then add pieces of bacon. Flip once you see bubbles forming on the edges of the pancake. Transfer to a plate, top with butter and add your maple syrup. Enjoy!
If you want a girly pancake try adding 1 tsp vanilla extract and 1 tsp lemon zest to the pancake batter. Once your pancakes are golden brown, spread butter over the top and cover with strawberries, Mascarpone cheese and maple syrup!
