Chicken Salad Sandwiches

I love a good sandwich, especially a chicken salad sandwich. This recipe is derived from two recipes I seem to crave on many occasions. One from a Vegas casino at some fancy restaurant and the other from a caterer I used to work for. Here is my simple at home version!


Recipe (serves 4-5)

1 whole rotisserie chicken, shredded
 or
3 to 4 chicken breasts, roasted and shredded
1 bunch red grapes, cut in halves
2 stocks celery, sliced and diced
1 tbsp spicy honey mustard
3/4 cup mayo
pinch of salt
freshly cracked pepper

First, shred a rotisserie chicken into a bowl. Add the mustard and mayo. Add cut grapes and diced celery into the bowl. Thoroughly mix together and season with salt and pepper. Toast your bread and mound about a cup of chicken salad onto your bread. Top with romaine lettuce and the top piece of bread. Cut and enjoy.

NOTE: The restaurant I went to at Vegas casino served their chicken salad sandwich on a Cherry Wheat Bread with Sprouts. It was amazing. So you can try out different breads and add sprouts if you please.
Note: This recipe could feed up to 8 people. So filled up a loaf of fresh bread with this creamy chicken salad, slice and serve.
