Peach Coffee Cake with Vanilla Glaze

My mom and I made this recipe because we saw something similar on Pinterest. This is my dairy free version that is so delicious you don't miss milk or sour cream! Give this to a neighbor or for the office, there's plenty for everyone. 

Recipe
2 eggs
1 cup vanilla almond milk
1/2 cup oil
1 tsp. vanilla
1/2 cup apple sauce
3 C flour
1 C sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda

Yellow Peach Topping
6 large yellow peaches, sliced
3 tbsp. earth balance butter, melted
3/4 cup light brown sugar
1/2 cup dark brown sugar
1 tbsp. cinnamon
2 tsp. nutmeg
4 tbsp. flour

Vanilla Glaze
1 tbsp. earth balance butter
1 tsp. vanilla or vanilla bean paste
3/4 C powdered sugar
2-3 tsp. vanilla almond milk 

(Add 1 tbsp bourbon ... it's delicious, and 1/4 cup more powdered sugar!)


Prepare an 8, 9, or  9 1/2 inch spring form pan (depending on how thick you'd like the cake to be) with cooking spray and fit with wax or parchment paper. Preheat the oven to 350 degrees. In a bowl of an electric mixer fitted with a paddle attachment beat the eggs on medium speed for 1 minute. Add oil, vanilla, almond milk and apple sauce. Mix to incorporate, then In separate bowl, mix flour, baking soda, baking powder, salt and sugar. Add dry ingredients in thirds to the wet mixture and mix just slightly. Do not over mix. Scrap bowl and pour into the springform pan. 

Now, clean and slice the peaches, leaving the skin on. In a separate bowl mix the sugars with cinnamon, nutmeg and flour, stir together. Melt the butter, then pour over the peaches. Add half of the sugar to peaches and toss. Set aside. 

With your hands or a spoon add a quarter of the remaining sugar mixture over the cake batter. Using a knife cut into the sugar and swirl into the batter. Top the batter with the peaches and then add the remaining sugar mixture to the top. Place in the oven for one hour and an additional ten minutes. Test the cake with a toothpick to make sure it is done baking. Let cool for an hour or two, then make the vanilla glaze. Using soft butter combine with sugar, vanilla and add milk. Drizzle over cake, slice and enjoy with a hot cup of coffee. 

















Note: Turn springform pan half way through baking process for even baking! Also, substituting real unsalted butter and milk will work just as well as the almond milk and vegan butter in this recipe.
